Cold Coffee and cheese toasts, the perfect breakfast rain or shine.

Honestly, there are a million breakfast options and we all know this, but nothing beats cheese toast and cold coffee. That was my standard breakfast year round. I know people in Punjab like to pretend that India is cold in the winter – it’s not. Not when you’ve lived anywhere with actual winters. Ya ya yaaaaaa, I knowwwwww humidity, makes it sooooo much colder..then there’s the lack of central heat..and the inversion…apppppft, I say! APPPPFT! It’s NEVER too cold for cold coffee!!

So, cold coffee huh? Yea, it’s awesome winter or summer. It’s really hard to work back from a pseudo rant that was unnecessary and sort of happened on its own. I mean who gets so worked up about temperature and seasons? If we were talking about plaid, flat brimmed Stetsons, PSL’s, and Utah, sure, there’s some meat to that hatred of the bit**es, but who gets mad about people’s interpretation of their own weather and temperature tolerance. Clearly, I have unresolved issues when it comes to climate. But that’s also because I’m one of those weirdos that believes in science and climate change, however, I’ll steer clear of that rant because it’ll last a life time and only piss off the the amazing group of people that agree with MTG.

I honestly don’t know what’s happening in this post..I’m now upset about climate change and right wing politics. I need a nap and a snack. Oh look at that, we’ve gone full swing and are back to cheese toast. It’s savory, spicy, light, and delicious. It’s ridiculously easy to make, soft on the purse strings, and the perfect indulgence. Throw in some cold coffee and you have a solid Punjabi breakfast.

Ingredients

  • 4 slices white bread – you can switch it up if needed

  • 2 pats butter, melted

  • 2 cups shredded pepper jack cheese

  • 1 tomato, diced

  • 1/2 onion, diced

  • 1/2 bell pepper, diced

  • 1 chili pepper, minced

  • 1/2 cup cilantro, minced

  • 1 tsp chili flakes

  • salt to taste

  • pepper to taste

Directions

  • Preheat the oven to 350 degrees.
  • Spread the butter on the slices of bread and set aside.
  • In a medium sized mixing bowl, mix cheese, tomato, onions, bell pepper, chili pepper, cilantro, chili flakes, salt, and pepper.
  • Evenly spread the mixture on the slices of bread.
  • Place the slices of bread in the oven and bake till lightly toasted and the cheese has melted completely.
  • Add Maggi and serve.
