There are days when the notion of cooking makes me want to stab people in the eyes. Today was on of those days. But sadly, I am not a camel and can’t live off of my hump for 40 days, so I had to ponder dinner. Cumin chicken tacos it was.
I love tacos. Plain and simple. It’s amazing how much flavor you can pack into a little tortilla. My go to taco at my favorite spot is birria with consume to dip it in. But when I’m home and need a quick fabulous dinner, I pick the path of least resistance. This is where I pretend that the 8 hungry mouths I have to feed daily are human. Luckily, they aren’t. I just own an insane number of animals, and one Nash, who is also known as giraffe. No, he doesn’t have a long neck, nor is he excessively tall, spotted, have a blue tongue, or any other such resemblance. Rather, he’s just perfected his giraffe call. He coughs, they come. Same same when Sally coughs at giraffes. The two coughing at each other is awkwardly adorbs. Especially on FaceTime. Sally and the Giraffe, to clarify. I don’t run about the world having Sally FaceTime with random giraffes. That would be odd. Except in Johannesburg but that’s another story. Now where was I? Ah yes, when I need a fabulous dinner and can’t be f**ked to put in the time. So, I pick cumin chicken tacos topped with radish slaw.
Today was exhausting. It was blazing hot despite being mid October. I felt like something that had been stuck to someone’s shoe, and all the pets were in a mood and being bastards, plus the normal grown up working thing. So come dinner time all I wanted to do was crawl under Pizza the Hut and eat my way through. But then I’d be sad about how my ever growing ass was ever growing. So I pottered over to the kitchen and remembered I had some radishes I needed to use up and some chicken in the freezer. I set the chicken out to thaw. Put the Giraffe to cutting up the radishes and went to go sit on the couch. Twenty minutes later the chicken was thawed, radishes, chili peppers, and cilantro was chopped, and I was ready to go.
This dish is incredibly satiating. So easy to put together and it’s healthy! It nearly made me forget how pooey I felt. The cumin adds the perfect zing to an otherwise bland meat. The radishes give the dish a great sharpness. The cilantro, peppers, and lime make it seem so fresh and fabulous. All in all this is a great fast meal – lunch or dinner. Summer or winter!
