Love hasselback potatoes? Of course you do! Now the question is how to dress them up – Cumin hasselback potatoes is the answer.

I claim many things, such as you’ll love cumin hasselback potatoes if you like cumin and garlic. But one thing I never claim is to be intelligent, unless of course I’m in the middle of a power trip, then I’m just f**king fabulous. However, when I’m not on a power trip, you’ll often hear me say, “I never claim to be intelligent but I often prove how dumb I am.” And now I’ll prove it to you.

Food, like so many things, is ever evolving. Sometimes for the better and sometimes you end up with a hard seltzer and hope it dies a fiery death. In my case, I’d NEVER heard of hasselback potatoes till 2006. I was living in Seattle and embracing all that the city had at the time. The angry feminists, the frumpy men with their gross velcro sandals, the strange obsession with piss poor coffee and IPAs, and the delightful elitism that came with their over assertion of how humble they were as a people. Now mind you, by 2008 Seattle was a whole different ball game of amazing. It’s still the only place I’d want to call home for the rest of my life. But back to our story of how slow witted I really am. It was the first time I’d lived in a city with a football team, and I was EXCITED! Even though it’s arguable that at the time the Seahawks were as good as the Mariners are today. If you don’t like sports you’ve already tuned out. If you do like sports you just got the joke. So there I was at some boozy, snooty, and very annoying mixer at the Colombia Tower Club and someone mentioned that their cook had ruined the hasselback potatoes. As anyone would be expected, I feigned horror! I mean, NOT THE POTATOES! Finally once in the car, I turned to my then husband and said, “Why would they name a potato after such a mediocre quarterback? Why not call it like a Manning or something?” He doubled over laughing while I just sort of sat there blinking, most perplexed.

Now that I’ve proven myself to be a rather dull instrument allow me to discuss this marvelous creation. As Punjabis we really like our potatoes. Given that jeera aloo is one of my favorite dishes it seemed only natural to make some version of it for a Christmas dish. Hasselback potatoes are incredibly easy to make! Aside from the tedious slicing.

I served these fabulous cumin hasselback potatoes with my standing rib roast, and I can’t tell you what a hit it was. The spices on the rib roast mingling with the cumin and garlic on the potatoes was just heavenly. If you really want to shake it up, try the fenugreek hasselback potatoes.

Ingredients

  • 2 tbsp cumin, ground

  • 4 cloves garlic, minced finely

  • 1/2 cup olive oil

  • 2 tbsp butter, melted

  • Salt, to taste

  • Pepper, to taste

  • 4 potatoes

Directions

  • Heat oven to 425°F.
  • In a small bowl, mix cumin, garlic, olive oil, butter, salt, and pepper.
  • Place a potato between the handles of 2 wooden spoons or chopsticks. Slice the potato into thin slices, leaving 1/4 inch at the bottom unsliced; the spoon handles will prevent you from slicing the potato all the way through. Repeat with the remaining potatoes.
  • Place potatoes on a rimmed baking sheet and gently press down on them to fan slices in one direction.
  • Brush potatoes all over with olive oil mix. Make sure to get into all of the little crevices.
  • Roast potatoes, brushing occasionally with more olive oil, until fork-tender, golden brown, and crisp, 50-60 minutes.
  • Remove from oven and serve immediately.
