Radish Slaw

As a radish lover, I love nearly anything with radish in it. I love them in sabji, pickle, kimchi, or raw. So no big surprise that I think that radish slaw is the greatest thing since sliced radish. Hehe see what I did there? Sliced radish, she said.

It’s ok, you don’t have to roll your eyes, I know that I tell the lamest jokes ever. Which totally means I’ll tell you one at the end of this post. Why? Well why not, damn it! But back to radish slaw. It’s fabulous.

It’s ridiculously easy to put together and tasty. With virtually no calories you don’t feel bad about eating a lot of it. Though you may want to make sure to keep a breath mint handy after.

I serve this as a side salad to Indian meals or as a topping for cumin chicken tacos.

Now, as promised, an awful joke. Most of you have probably never heard a Santa Banta joke. They’re Punjabi go to jokes about two doofuses – named Santa & Banta. They’re the WORST! So here goes. This is set before the Chunnel had been built, in fact they were still bidding it out. So Santa Banta read about this and said, “Hey lets go bid.” So they went to England and presented their bid of 8 million pounds. No big shock, they received a call back immediately. They were asked to come in and explain how they could do it for 8 million when everyone else was projecting billions. So they came in and Santa said, “Simple, sir. We do all of the work ourselves. I will begin digging in England, and my brother Banta will start digging in France. Together, we’ll meet in the middle. Done!” The head of the commission asked, “And what if you don’t meet in the middle?” Banta responded, “No problem! Two Chunnels for the price of one!”

Thank you, thank you. I know. I know. That. Was. Awful. Wait till I tell you the one about the man that turns into toilet paper.

Ingredients

  • 2 limes, juiced

  • Salt, to taste

  • 2 cups red radish, sliced

  • 1/2 cup cilantro, minced

  • 1 chili pepper, minced

Directions

  • In a medium sized bowl mix lime juice and salt.
  • Add in cilantro and chili pepper, mix thoroughly to coat evenly.
  • Mix in radish and serve. These go perfectly as a side to any sabji or as a topping for cumin chicken tacos.
