Decadent Peach Cobbler with cardamom and a drop biscuit top. This cardamom peach cobbler is the thing all desserts should be made of.

Who doesn’t love a good peach cobbler? And truth be told, if the answer is anything but a resounding, “everyone” I don’t want to know the answer. This cardamom peach cobbler has the warm flavor of cardamom, the bright acidity of peaches, and the sweet goodness of a buttermilk drop biscuit.

I’m not sure which part of this peach cobbler I like more – the fact that it’s delicious or that it’s crazy easy to make. I suppose this is one of those left hand meets right hand recipes, in that I love that it’s delicious and crazy easy to make. It’s very much a mix it all together and stick it in the over. Oh and you don’t have to waste an endless amount of time beautifying it. Luckily for all of us, peach cobbler is one of those desserts that’s allowed to be a bit messy and imperfect, unlike so many!

No real pitfalls here, other than – MAKE SURE TO BAKE WITH A TRAY UNDER IT! The last thing you need is a big goopy mess at the bottom of your oven. The only other note is, I like to let my peach mix sit for about 20 minutes before baking it, really giving that cardamom a chance to infuse into the peaches, but definitely not a necessity.

This cardamom peach cobbler is incredibly easy to make and well worth the minimal effort. You can eat it hot or cold, with ice cream or without, and even a couple days in it’s delicious.

Ingredients

  • Peach Filling:
  • 8 peaches (44 ounces), halved lengthwise, pitted, and cut into cubes

  • 2/3 cup granulated sugar

  • 3 tbsp cornstarch

  • 1 tbsp fresh lemon juice

  • 1 tsp cardamom, ground

  • 1/4 tsp ground allspice

  • 1/2 tsp kosher salt

  • Biscuits:
  • 1 1/2 cups unbleached all-purpose flour

  • 3 tbsp granulated sugar

  • 1 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 3/4 tsp kosher salt

  • 6 tbsp cold unsalted butter, cut into pieces

  • 1/3 cup low-fat buttermilk

  • 1/3 cup heavy cream, plus more for brushing

  • Sanding sugar, for sprinkling

Directions

  • Filling:
  • Preheat oven to 375°F.
  • Stir together peaches, granulated sugar, cornstarch, lemon juice, cardamom, allspice, and salt.
  • Divide mixture between six 1 1/2-cup ramekins or gratin dishes (about 1 1/3 cups each).
  • Biscuits:
  • In a bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  • Cut in butter to form clumps no larger than small peas.
  • Stir in buttermilk and cream until a soft, sticky dough forms.
  • Spoon about 1/3 cup dough on top of each ramekin (fruit mixture should not be completely covered).
  • Brush tops with cream; sprinkle with sanding sugar.
  • Transfer to a baking sheet and bake until golden brown and bubbling, 55 to 70 minutes.
  • Let cool 30 minutes; serve with ice cream.

Notes

  • You can also make this recipe as one large single cobbler in a 2 1/2-quart baking dish; simply increase the baking time to 1 hour and 15 minutes.
