How are you not making cardamom chia seed pudding yet?

Chia seed pudding is amazing. Cardamom is amazing. Put them together and you have the joy that is cardamom chia seed pudding. Whether you’re having this as dessert, breakfast, or even a healthy treat, it is perfect. Adult friendly, kid friendly, and picky eater friendly. This dish is vegetarian, vegan, and gluten free. It pretty much marks off every checkbox you can find.

I tend to be a bit skeptical of all things haute in the health food arena. Needless to say when chia seed pudding started being all the rage, I was a bit out. Then I found myself detoxing from the Cabo experience. You know the type: ugly American tourists – sun burnt, over weight, wearing American flag bathing suits, drunk and obnoxious. Way too much shitty food and watered down drinks. But we were there for a fabulous wedding – so it was all worth it. The bride was gorgeous, the groom was handsome, and we danced the night away at the Peruvian/Iranian wedding of our dreams..and avoided the other yucky tourists.

After the wedding we decided to venture to the “other Cabo”. Where the grownups went. And it forever changed my opinion of Cabo. I went from saying,”Oh God, please never bring me back.” To, “Oh you have condos that are an entire floor of the building? Why yes, yes I would like to take a tour and look into financing options.” For anyone contemplating Cabo – I HIGHLY suggest considering a stay at the Solaz. It is truly one of the greatest properties I’ve ever stayed at. From the service, to onsite restaurants, to the absolutely STUNNING landscape and architecture. This place does not disappoint. But before this turns into an advertisement for the Solaz, I shall move on.

So there we were, enjoying the amazing view, lack of drunk Americans, and the sounds of the waves crashing against the shore. And in that moment of brevity I decided if I could love Cabo maybe I could love chia seed pudding. Needless to say, I loved it, and here it is in my own version on the website.

A couple quick pointers:

For anyone that’s read any of my blogs versus the millions of others out there. I don’t tend to do the step by step hand hold of, “Ok boys and girls, now you get a spoon..yaaaay for you!” But here I will give you a couple quick pointers. Don’t dump all of the ingredients in and then whisk – they DO clump. So even though this recipe is easy, follow the steps for long term sanity. Breaking up the clumps once they’ve formed is very tedious and annoying. Also, I prefer to put in whole cardamom pods because I found ground cardamom to be far too intense of a flavor for this otherwise delicately flavored pudding. And lastly, the reason I suggest not over sweetening this pudding is so that you can add lots of yummy sweet things on top.

This recipe is Punjabi fusion at it’s easiest and finest. Not every Punjabi recipe or Indian recipe has to be intense and time consuming. It’s just about bringing the best parts of the flavor profile to everyday favorite foods. Other favorite Punjabi fusion recipes of mine are cardamom pumpkin pie, cumin hassleback potatoes, and lemongrass shrimp.

Ingredients

  • 2 cup unsweetend almond milk

  • 4 tbsp black chia seed

  • 6 cardamom pods

  • 4 tbsp sugar

Equipment/Specialty Items

Directions

  • In a small container whisk milk and chia seeds together – ensure that there are no clumps of seeds.
  • Gradually whisk in sugar, until dissolved. Again, make sure there is no clumping.
  • Crack cardamom pods open and place into the pudding mixture.
  • Cover and refrigerate for 30 minutes.
  • Remove from refrigerator and stir to break up and clumps.
  • Cover and refrigerate overnight.
  • Once the pudding has set, top it with your favorite things, and enjoy.

Notes

  • Keep in an airtight container in the refrigerator for up to one week.
