Some days just call out for a decadent breakfast, and what could be more decadent than cardamom French toast with home made cardamom chantilly cream?

Yum! That’s really all there is to say. The fluffiness of good brioche, the creaminess of the egg, coupled with the yumminess of cardamom, sugar, and cinnamon. Then to be able to top that amazingness with fresh Chantilly cream, fruit, mint, maybe even a light drizzle of honey or syrup, and you’re in heaven…and definitely in a food coma. So how can you now want cardamom french toast as your next Sunday brunch?

The best part about this recipe is how simple it is to make. So much of Punjabi cuisine is tedious and painstaking, so I especially love fast recipes. Also, as much as I hate to say it, every now and again, I get sick of traditional Indian fare. So mixing things up with a bit of fusion or departure from the norm is nice. Cardamom French toast, some yummy breakfast potatoes, and a cup of masala chai are perfect for those chilly winter mornings. On the flip side, if you’re craving something Punjabi that’s insanely easy to make (for breakfast) try mitha puda. So easy and so delicious!

Beyond that, there isn’t much to say about the recipe itself, it’s fast, easy, great for adults and kids, and brings a new twist to traditional French toast. So eat sweets and make merry. As for me, I’ve gotten sucked into a not impressive series of “Who dunnit” tv shows. I wish they were better but they aren’t, so I shan’t bore you with the minutia of it all. But I shall go enjoy my own cardamom French toast as I watch this rubbish.

Ingredients

  • 3 eggs

  • 1/2 tsp cinnamon, ground

  • 1 tsp cardamom, ground

  • 2 tsp granulated sugar

  • 1/4 cup whole milk

  • Butter/Cooking spray for frying

  • 4 thick brioche slices

  • Chantilly cream for serving

Directions

  • Egg Mixture:
  • In a wide mouth bowl (large enough to fit slices of brioche) whisk together eggs, cinnamon, cardamom, sugar, and milk.
  • Dip and Fry:
  • Melt a little butter in a skillet over medium heat.
  • Dip the individual slices of brioche in the egg mixture. Make sure to coat evenly on both sides. Let the excess mixture run off.
  • Place the coated slices of brioche in the pan and fry on each side till golden brown.
  • Serve:
  • You can serve with your favorite breakfast condiment: butter, honey, maple syrup, or with Chantilly cream and fresh fruit.
