Frozen mint lemonade on a scorching day, what more could you ask for?

It’s the perfect solution for all things on a hot day. The first time I had frozen mint lemonade was in Dubai. I was dating a cretin at the time and we were in the middle of some useless conversation. I still remember taking the first sip and thinking, “Well f**k me, how have I never had this?!” Needless to say, it was quickly added to the repertoire.

I absolutely love this drink! I make it for nearly any occasion during the spring, summer, or fall. It’s just so cooling, refreshing and tasty. The last trip to the mountains was fabulous. I packed a light lunch of curry egg salad sandwiches, some salt and vinegar chips, almond cardamom sponge cake, and some of this lovely lemonade. Needless to say, I was quite popular with the fellow guests. Even if I hadn’t been, I’d have been quite content eating through my hoard.

Meanwhile, the relationship was so awful that I’ve had to write off Canadian men, as a whole. The whole nation – un-date-able! Which is a shame, I’m strangely attracted to the Newfi accent. Don’t ask me why, I don’t have reasons behind my lunacy. Just the lunacy.

Ingredients

  • 6 tbsp sugar, or to taste

  • 1 cup water

  • 1//2 cup fresh lemon juice

  • 40 mint leaves, plus extra for garnish

  • 18-20 ice cubes

  • Limes, sliced for garnish

Directions

  • In a blender add lemon juice, sugar, and water. Blend till sugar is dissolved.
  • Add in mint leaves and pulse until leaves have broken down to the desired size.
  • Add ice and pulse until desired consistency is reached. If it gets too thick to blend let the mixture let it sit for a minute or two and then try it again.
  • Pour into glasses and garnish with mint and limes. Serve immediately.
